Fajita Vegetarian Wrap

  • 4 Dominex Eggplant 4 oz Burgers (#2101), thawed
  • 1 Packet Fajita Seasoning Mix
  • 1 Cup Pepper Jack Cheese, shredded
  • 1 Cup Cheddar Cheese, shredded
  • 1 Cup Sour Cream
  • 2 Medium Onions, quartered and separated
  • ½ Green Pepper, cut into strips
  • ½ Red Pepper, cut into strips
  • ¾ Cup Salsa
  • 1 Cup Shredded Lettuce
  • 8 Large Tortillas

Mix crumbled Dominex Eggplant Burger and Fajita mix in microwave-safe bowl. Cover with plastic wrap and microwave at 50% power for two minutes. Caramelize onions. Assemble wraps. Cut diagonally and serve.
